CARAMEL CORN
How lucky is this caramel corn to be made with PEI butter and cream?
1 cup of brown sugar
1/4 cup of light corn syrup
1/4 teaspoon cream of tartar
1/2 cup of butter, unsalted
1/4 cup of heavy cream
1 tsp baking soda
1 bag of microwave popcorn, natural flavour
1/2 teaspoon of sea salt

INSTRUCTIONS:
- Preheat oven to 200°F.
- In a medium saucepan, add brown sugar, corn syrup, cream of tartar and butter. Stir and cook over medium heat, letting boil without stirring until temperature reaches 230°F.
- Meanwhile, pop popcorn according to bag and add to a parchment lined baking sheet.
- Remove caramel from heat, add cream and baking soda. Stir and pour over popcorn.
- Bake caramel corn for 1 hour, stirring every 20 minutes. Let cool on pan completely and break up into smaller pieces.
